Ingredients
1 Small can sliced mushrooms
1 Small green pepper, chopped
1 Small zucchini, grated
1 cup Chopped ham
1 package Frozen chopped spinach
1 pound Lowfat cottage cheese,
The excess liquid pressed out
1 cup Grated mozzarella
4 Eggs, lightly beaten
2 tbsp Olive oil
1 tsp Dill weed
1/2 tsp Pepper
Preparation
Saute mushrooms, peppers and zucchini in 1-2 Tbsp butter. When tender crisp, add chopped ham, saute for a few minutes. Stir in spinach that has been thawed and squeezed to remove excess moisture. Saute another few minutes. Mix in a bowl both cheeses, eggs, olive oil, dill weed and pepper. Add vegetable mixture to above. Pour into a greased 9 or 10 inch pie plate or quiche dish. Bake at 350 degrees untill a knife plunged into the middle comes out clean, about 45 minutes.
Cook's Notes
Use part skim mozzarella to reduce the fat in this nutrient-rich dish.
