Ingredients

2 tbs. Lemon juice
2 tbs. Red wine vinegar
3 cloves Garlic, minced
1 tsp. Red pepper flakes
1 tsp. Freshly ground black pepper
Pinch of salt
1/4 cup Fresh cilantro, chopped
1/4 cup Fresh parsley, chopped
3 Avocados, seeded and diced
1 Small loaf of crusty bread, sliced 1/3" thick and toasted

Preparation

1. In a small liquid measuring cup, combine first six ingredients.

2. In a serving bowl, add liquid to cilantro and parsley.

3. Fold avocados into the chimichurri.

4. Spread a heaping spoonful of topping onto the warm slices of toast and ENJOY!

Cook's Notes

You can make the chimichurri ahead of time, adding the avocadoes right before serving.
