Ingredients
2 tbsp Oil
1/2 Onion chopped
1/2 Bell pepper chopped
1/2 Zucchini chopped
1 16oz. Can stewed tomatoes
6 Eggs
1/2 cup Shredded cheddar cheese
Preparation
In a medium skillet heat oil over medium-high heat. Add onion, bell pepper and zucchini; cook and stir. Add tomatoes; stir.
With a tablespoon, make 5 indentations ("nests") around the outside of the pan and 1 in the middle: drop 1 egg into each indentation.
Cook, covered, on medium heat 8 to 10 minutes or until eggs are set. Sprinkle with cheese.
Cook's Notes
Individual nests can be made in ramekins or large custard cups. Bake at 350F for 20 minutes or until eggs are set.
