6 Small red potatoes
1/2 c. Reduced fat shredded sharp cheddar cheese
2 tbs. 50% less fat crumbled real bacon bits (suh as Hormel)
2 tbs. Chopped green onions
1/4 tsp. Freshly ground black pepper
Preparation
Place potatoes in an 8 in square baking dish. Cover with plastic wrap; vent. Don't let plastic wrap touch the potatoes. Microwave at high 5 min or until potatoes are tender. Cut potatoes in half lengthwise; sprinkle with cheese. Microwave at high 30 seconds or until cheese melts. Top with bacon bits; green onion, and pepper.
