Honey Soy Sauce Chicken

A great one to prep ahead and cook for dinner on a busy night.

Ingredients

1/2 cup Soy sauce

2 tbsp Each honey and dry sherry

2 Garlic cloves, minced

6 To 8 chicken thighs, skin removed

Preparation

Combine soy sauce, honey, sherry and garlic in large bowl. Add chicken and toss to coat. Cover and refrigerate overnight, turning occasionally. Transfer chicken and marinade to heavy large saucepan. Bring to a boil over medium-high heat. Reduce heat and simmer gently until chicken is just cooked through, turning occasionally, about 20 minutes. Serve over steamed rice.
