Zesty and tangy - healthy and easy!
3/4 pound Uncooked corkscrew pasta, hot cooked and drained
3 tablespoons Olive or vegetable oil
2 Medium zucchini, cut into 1/4-inch slices
1 cup Broccoli flowerets, steamed crisp-tender
1 Large red or green bell pepper, cut into small chunks
1/2 cup Cherry tomato halves
1/3 cup Sliced radishes
3 Green onions, chopped
2 tablespoons Drained capers, optional
1 cup Prepared ranch salad dressing
In large bowl, toss pasta and oil; cool. Add remaining ingredients; toss again. cover; refrigerate at least 2 hours. Just before serving, add additional salad dressing, if desired.
