Sliced Tomato & Onion Salad

Tangy and refreshing, this red robust salad is perfectly complemented with balsamic!

Ingredients

1/4 cup Balsamic vinegar

3 tablespoons Water

1 teaspoon Olive oil

1 teaspoon Dijon mustard

1/4 teaspoon Coarsely ground pepper

1/8 teaspoon Salt

5 Medium unpeeled tomatoes (about 2 1/2 pounds)

1 Large purple onion, thinly sliced and separated into rings

2 teaspoons Minced fresh oregano

Preparation

Combine first 6 ingredients in a jar; cover tightly and shake vigorously. Set aside. Core tomatoes; cut each into 6 slices. Layer tomato and onion in a shallow dish; sprinkle with oregano. Pour vinegar mixture over vegetables; cover and marinate in refrigerator 3 hours. Yield: 12 servings.
