Potato with Grilled Kebab

Ingredients

1/2 cup Plain low-fat yogurt
1 tsp Each chopped green onions and parsley
1/4 tsp Lemon pepper
4 Potatoes, baked (8 to 10 oz) shredded lemon peel, optional
Grilled Prawn and Vegetable Kebabs (see below)

Preparation

Combine yogurt, green onion, parsley, and lemon pepper; mix well. Slit baked potato lengthwise and open by gently squeezing from bottom. Spoon 2 Tbsp yogurt mixture over potato. Sprinkle with lemon peel.

Cook's Notes

Grilled Prawn and Vegetable Kebab: Alternately thread each of 8 skewers with 2 prawns and one each cherry tomato, mushroom, piece of yellow pepper, and slice of zucchini. Combine 2 Tbsp vegetable oil, 1/4 tsp paprika, and 1/8 tsp pepper; brush kebabs with mixture and broil on preheated grill 3 to 4 minutes or until prawns turn pink and vegetables are crisp-tender; turn once during cooking.
