*Note figs need to be marinated at least four hours before prep.
DOUGH-
Dissolve together yeast and warm water. Add olive oil, flour, salt and sugar. Mix until dough comes to a ball. Let rise until double in volume. Punch down and let rise again.
Form pizza shell by rolling out with flour.
Brush shell with olive oil.
TOPPING-
Top with cambozola cheese. Sprinkle with thinly sliced shallots.
Take 12 figs (black mission, calmyra or other favorites- preferably fresh), slice and marinate in Cabernet or Pinot Noir for at least four hours - place on top of cheese.
Sprinkle with Parmesan, salt and pepper, drizzle with honey.
Cook on thin bed of cornmeal at 475 degrees for 10-12 minutes.
