Ingredients

4 4-6oz Halibut steaks
2 tbsp Olive oil
1 Tomato, diced
1/2 cup Sliced mushrooms
1/4 cup Each chopped onion and
Green pepper
1/3 cup Dry white wine
1 tbsp Chopped parsley
1 clove Garlic, crushed
1/2 tsp Salt
1/4 tsp Each pepper and thyme
1 Bay leaf

Preparation

Lightly brown halibut in oil. Add remaining ingredients. Bring to boil, simmer covered about 10 minutes or until fish flakes. Remove halibut and vegetables to serving platter with slotted spoon, keep warm. Simmer liquid until reduced to 1/4 cup, spoon over halibut.
