Reduced Fat Spinach & Artichoke Dip

Ingredients

6 1/2 ounces Marinated artichoke hearts, drained and chopped

5 ounces Frozen chopped spinach, thawed, squeezed dry, and finely chopped

1/2 cup Freshly grated Parmesan cheese

1/2 cup Soyannaise (from Trader Joe's)

1 1/4 cups Coarsely grated reduced fat Monterey Jack cheese

Preparation

1. Preheat oven to 350 degrees F.

2. In a large bowl, combine artichoke hearts, spinach, Soyonnaise, Parmesan cheese, and 1 cup reduced fat Monterey Jack cheese, stirring until combined.

3. Place mix into a small baking dish and sprinkle with remaining 1/4 cup reduced fat Monterey Jack cheese.

4. Bake dip in middle of oven until cheese is melted, about 15 minutes.

*If you want the cheese to brown, put under broiler for a few minutes.

5. Serve dip warm with low fat wheat crackers.
