Holiday Sweet Potatoes

Ingredients

4 Large sweet potatoes or yams, peeled, cooked and mashed

1 Orange

1 Lemon

2 Eggs

1/2 cup Butter

1 cup Milk

3/4 cup Sugar (or less if potatoes are sweet)

1/2 teaspoon Nutmeg

1/2 teaspoon Cinnamon

Preparation

Grate the peels off of the orange and lemon. Add all ingredients together and mix with handmixer until smooth and well blended. Place in greased 9" x 13" pan (if you double the recipe) or smaller. Top with mini-marshmallows. Bake at 350 degrees F for approximately 45 minutes.

Cook's Notes

Use lowfat or nonfat milk to reduce the total fat.
