Ingredients

6 ounces Wide egg noodles
1 cup Sliced mushrooms
1 can (7 ounces) chunk light tuna in water; drained
1 cup Peas
1 can (10 ounces) reduced-fat cream of mushroom or celery soup
1 cup Shredded carrots (buy matchstick carrots if possible)
3/4 cup Shredded cheddar cheese
2 Eggs, lightly beaten
3/4 cup Italian-style bread crumbs

Preparation

1. Preaheat the oven to 350 degrees. Spray a large round casserole dish with nonstick cooking spray.

2. Prepare the egg noodles according to the package instructions.

3. While the noodles are cooking, combine all the other ingredients, except 1/4 cup of bread crumbs, in a bowl and mix them. When the noodles are cooked, drain them and quickly add them to the tuna mixture and mix them in thoroughly.

4. Transfer the mixture to the casserole dish and sprinkle the reserved bread crumbs on top.

5. Bake the casserole, uncovered, for 30 minutes until lightly browned on top.

Cook's Notes

Tip: Cok the whole bag of egg noodles and toss the extras with buttle or olive oil for picky eaters.
