Ingredients

1 cup Whole wheat flour
1/2 cup White flour
1/2 cup Brown sugar
1 teaspoon Baking powder
1 teaspoon Baking soda
1/2 teaspoon Nutmeg
1 teaspoon Cinnamon
1/4 teaspoon Salt
2 tablespoons Oil
1 Egg
1/4 cup Skim milk
1 cup Grated carrots
8 ounces Crushed pineapple

Preparation

Mix together dry ingredients. Separately mix oil, egg, milk, carrots, and pineapple. Mix all together until moist. Spoon into greased muffin pans. Bake 20 - 25 minutes at 350 degrees.
