Fettuccine with Tomatoes and Zucchini

A quick and easy pasta dish bursting with the flavor of fresh vegetables.

Ingredients

6 oz Uncooked fettuccine, hot

Cooked and drained

1/2 lb Ground beef

1/2 Onion, chopped

1 tsp Dried tarragon, crushed

1 can (14 1/2oz) DEL MONTE Original

Style Stewed Tomatoes, undrained

1 can (8oz) DEL MONTE Tomato Sauce

1 Medium carrot, cut into julienne

Strips

1 Medium zucchini, cubed

Chopped parsley

Preparation

In a large skillet, brown beef with onion and tarragon; drain fat. Add stewed tomatoes with juice, tomato sauce and carrots. Cook, uncovered, over medium heat 8 minutes, stirring occasionally. Add zucchini; cover and cook 7 minutes or until zucchini is tender. Just before serving, spoon sauce over hot pasta. Garnish with chopped parsley, if desired.

Cook's Notes

HINT: Pasta may be cooked ahead and rinsed in cold water. Freeze or refrigerate; reheat in boiling water or microwave oven.
