Ingredients

Nonstick cooking spray
1/4 cup Evaporated fat free milk
3 tbsp Dijon mustard
1/4 cup Fine dry bread crumbs
1/4 cup (1 ounce) grated Parmesan cheese
4 (about 1 pound Total) boneless, skinless chicken breast halves

Preparation

Preheat oven to 475 degrees F. Spray 13x9-inch (3-quart rectangular) baking dish with cooking spray. Combine evaporated milk and mustard in shallow bowl. Combine bread crumbs and cheese in separate shallow bowl. Dip chicken into milk mixture, coating both sides, then into bread crumb mixture. Place in prepared dish. Bake for 15 to 20 minutes or until chicken is golden brown and no longer pink in center.

This recipe is awesome! It's so simple! I will definitely make this over again and again! I think next time I will add some crushed corn flakes to add some crunch to the chicken! (Because my husband and I love crunch!) I'm sure this recipe would also work in a frying pan too. Oh, and my husband HATES mustard and he loved this! (I also used Spicy Brown Mustard)

Wow! This was delicious! I used crushed herb croutons instead of the bread crumbs. My family loved it!

This is a great recipe. My husband had to make it and he did not have any trouble :) We didn't have the right ingredients on hand so we used spicy mustard instead of dijon and crushed saltines instead of breadcrumbs. It was very good. We will make it again.
