No Bake Cherry Cheese Cake

Not sure where my mother found this recipe, but it has been a family favorite for as long as I can remember. Quick and easy to prepare with a minimum of ingredients, time or effort.

Ingredients

CRUST:
1/2 cup Butter
2 cups Graham cracker crumbs
1/2 c. White sugar
FILLING:
1 pkg. Dream Whip topping
1 cup Powdered sugar (icing sugar)
8 oz. Cream cheese, softened at room temperature
TOPPING:
1 can E.D. Smith Cherry Pie Filling

Preparation

CRUST: Melt butter. Add crumbs and powdered sugar. Stir well. Press into bottom of 13"x9"x2" pan.

FILLING: Prepare the Dream Whip (or other artificial whipped topping mix such as Lucky Whip or other brand name) according to package directions. Add cream cheese and powdered sugar. Mix until smooth. Pour over crust and refrigerate 2 hours or overnight. Top with favorite canned pie filling if E.D. Smith is not available.

Cook's Notes

You can substitute other pie fillings such as blueberry or lemon as a topping. Or serve with a drizzling of a fruit sauce such as raspberry, rhubarb, strawberry, etc. You can also substitute low fat cream cheese and reduced sugar Pie filling and/or use 1/2 cup of Splenda to replace icing sugar. To make it a bit more tangy and lemony flavored you can also add the juice of 1/2 a lemon.
