Cheesy Cioppino

Italian sausage, lobster, and shrimp with lots of vegetables.

Ingredients

1/2 lb Sweet (mild) Italian sausage, thinly sliced

2 tbsp Olive oil

1 Large onion, chopped

1 Medium green bell pepper, coarsely chopped

1 Large clove garlic, minced

2 cans (16 oz) beef broth

1 can (28 oz) tomatoes, undrained, chopped

1 can (8 oz) tomato sauce

1/2 cup Dry red wine

1 lb Medium shrimp, shelled and deveined

1 1/2 cups Sliced zucchini

1 cup Sliced carrots

3/4 cup Diagonally sliced celery

2 Lobster tails, cooked, shelled and sliced into 1/2-inch pieces

1 1/2 cups Cooked and drained fusilli pasta

1/4 cup Chopped parsley

1/2 tsp Dried basil, crushed

3 cups (12 oz) shredded Jarlsberg cheese

Preparation

In large saucepan, brown sausage in oil. Add onion, green bell pepper and garlic. Cook and stir until onion is transparent. Add beef broth, tomatoes with juice, tomato sauce, wine, shrimp, zucchini, carrots and celery. Simmer until vegetables are tender and shrimp is cooked, about 10 minutes. Add lobster, pasta, parsley and basil; heat through. To serve, spoon soup into 8 individual ovenproof crocks. Evenly top each with cheese. Broil 4 to 5 inches from heat source, until cheese is melted and lightly browned.
