Ingredients

1 15oz Can black beans, rinsed and drained
1/2 cup Chunky salsa
1/2 teaspoon Ground cumin
1 2 to 2 1/4 pound Deli roasted chicken
1/4 cup Shredded Monterey Jack cheese with jalepeno peppers (1oz)
Dairy sour cream

Preparation

1. Preheat oven to 359 degrees. In a small bowl, stir together beans, 1/4 cup of the salsa, and the cumin. Divide bean mixture among 4 individual au gratin dishes or casseroles. Set aside.

2. Cut chicken into quarters. Place one piece on bean mixture in each dish. Spoon remaining 1/4 cup salsa evenly over chicken pieces. Sprinkle with cheese.

3. Bake for 15 to 20 minutes or until heated through. If desired, garnish with sour cream.
