Ingredients

1 lb American Lamb
1/4 cup Green onions, finely chopped
1/2 tsp. Ground cinnamon
1 tsp Ground cumin
1 tsp Allspice
1 tsp Salt
3 tbsp. Plain bread crumbs
1 Egg
Metal or wood skewers (presoaked if wood)
Ice water
Tzzatziki for dipping

Preparation

1. if using wood skewers presoak them

2. cut lamb in small cubes and grind in food processor

3. In small bowl use hands to mix lamb with egg, green onions, spices and bread crumbs until blended. Don't over-handle. COver and refrigerate for 1 hour

4. To form meatballs, dampen hands with ice water. Roll 2 Tbsp. of mixture between hands forming 1 inch thick tube. Place on oiled baking sheet. repeat, dampening hands as needed to prevent sticking.

5. Carefully slide skewers into meatballs.

6. Grill on oiled rack over high heat turning once until internal temperature reads 150 degrees. Serve immediately.
