Spaghetti Twist with Spicy Fresh Salsa

Ingredients

1/2 cup WISH-BONE Italian or Lite Italian Dressing, divided
1 lb Boneless chicken breast, cut into thin strips
4 tsp Finely chopped cilantro,* divided
1/4 tsp Plus 1/8 tsp ground cumin, divided
1 Medium onion, chopped
8 Small tomatoes, chopped**
1 can (4oz) chopped green chilies, undrained
1/2 tsp Sugar
1/4 tsp Hot pepper sauce
12 oz Uncooked spaghetti twist or fusilli pasta, hot cooked and drained
1 cup Finely shredded Monterey Jack or Cheddar cheese

Preparation

In large skillet, heat 2 Tbsp Italian dressing. Cook and stir chicken, 1 tsp cilantro and 1/8 tsp cumin in dressing until chicken is cooked through and tender; set aside. In same saucepan, heat 2 Tbsp Italian dressing ; cook and stir onion in dressing 3 minutes or until onion is almost tender. Add tomatoes, green chilies with liquid, sugar, hot pepper sauce, remaining 1/4 cup Italian dressing and 1/4 tsp cumin. Bring to a boil; reduce heat and simmer about 20 minutes. Stir in cooked chicken mixture and remaining 3 tsp cilantro; heat through. To serve, spoon sauce over pasta and sprinkle with cheese.

Cook's Notes

* Substitute 2 tsp dried cilantro. Use 1/2 tsp with the chicken and 1 1/2 with the sauce.
** Substitute 1 can (28oz) crushed tomatoes.
