Ingredients

2 lbs Small egg plant

4 lbs Tomatoes

2 lbs Zucchini

1 lb Green pepper

1 or 2 cloves Garlic

1 1/2 cups Olive oil

Salt and pepper

Preparation

Wash all vegetables but do not peel them. Slice quite fine. Peel and crush garlic. Heat the oil. Add all the vegetables. Cook over high flame for about 20 minutes. Reduce heat and continue cooking until it looks like a brown marmalade. Season half way through cooking. Ratataville can be eaten hot or cold.
