Cottage Cheese Pie

Ingredients

1 Small can mushrooms, bits and pieces
1 Small green pepper, chopped
1 Small zucchini, grated
1-2 tbsp Butter
1 cup Chopped ham
10oz Package spinach, thawed and
Squeezed dry
1 lb Cottage cheese, excess liquid
Pressed out
1 cup Grated mozzarella cheese
3 Eggs, slightly beaten
2 tbsp Olive oil
1 tsp Dill weed
Pepper to taste

Preparation

Saute mushrooms, pepper, and zucchini in butter. When soft add ham, saute another few minutes. Add spinach, cook a few minutes. Remove from heat.

Mix in a large bowl, cottage cheese, mozzarella, eggs, olive oil, dill weed, and pepper. Add the vegetable mixture and mix well. Pour into a 9-10" pie plate. Bake at 350 degree oven until knife plunged in middle comes out clean, about 45 minutes.

We had this recipe today for an office brunch. It was easy to make the night before, then we warmed it in the microwave. I made it with fat free cottage cheese. For the rest of he meal we had fresh fruit, yogurt, granola and banana nut bread. Very delicious!

This recipe was delicious! My only concern is the calorie count doesn't seem quite right for the amount of cheese and stuff. How large is a serving size?
