Chicken & Spaghetti di Napoli

A filling weeknight dinner

Ingredients

6 slices Bacon

6 Boneless skinless chicken breast halves (about 1 1/2 pounds)

1 cup Thinly sliced carrots

1 clove Garlic, finely chopped

1 (26-ounce) jar Tomato & basil pasta sauce

1 (1-pound) package Spaghetti

2 tbsp Olive or vegetable oil

Preparation

In large skillet, cook bacon until crisp. Reserve 2 tablespoons drippings; drain and crumble bacon. In same skillet, brown chicken in reserved 2 tablespoons drippings; remove. Add carrots and garlic; cook and stir until tender-crisp. Add pasta sauce and chicken. Simmer, uncovered, 10 to 15 minutes or until chicken is tender. Meanwhile, cook spaghetti according to package directions; drain. Toss with oil. Slice chicken; serve on hot cooked spaghetti tossed with sauce. Garnish with crumbled bacon. Refrigerate leftovers.
