Ingredients
2 tsp Olive oil
1 Small onion chopped
1 Garlic clove chopped
4 Eggs
1/4 cup Toasted bread crumbs
1/2 tsp Salt
1/8 tsp Black pepper
1/8 tsp Oregano
1/8 tsp Hot sauce
2 6oz Jars marinated artichokes, drained and chopped
8oz Shredded sharp cheddar
2 tbsp Chopped fresh parsley
Preparation
Preheat oven to 325F. Coat 7"x11" baking pan with nonstick. In a skillet heat oil over medium-high heat; saute onion and garlic until tender.
In a large bowl combine eggs, bread crumbs, seasonings and hot sauce. Add artichokes, cheese, parsley and onion mixture.
Pour into baking pan and bake for 35 to 40 minutes. Remove to cool then cut into small squares.
