These would be great with a nice cup of tea or coffee.
1 cup Persimmon pulp
1 tsp Baking soda (sprinkled over
Pulp)
1 cup Sugar
1/2 cup Shortening or butter
1 Egg, beaten
2 cups Flour
1 cup Walnuts, chopped
1 cup Raisins
1 tsp Cinnamon
1 tsp Clove
1/2 tsp Nutmeg
1/2 tsp Salt (if using salted
Butter no need to add salt)
Beat thoroughly the persimmon pulp, baking soda, sugar and shortening until creamy. Add egg, flour, sifted spices, nuts and rasins. Drop by spoonfuls onto greased baking sheet.
Bake in 375* F. oven from 12-15 minutes.
Makes about 3 dozen cookies.
