Grape Leaf Dolmas

Ingredients

2 lbs Diced lamb or beef
1 Onion chopped
1 Bell pepper chopped
3 Leeks (white part only) diced
3 tbsp Finely chopped fresh dill OR
2 tsp Dried dill
1/2 cup Chopped fresh cilantro
1 cup Uncooked rice
3 Garlic cloves chopped
1 tsp Salt
1 tsp Pepper
1 15oz Jar grape leaves, rinsed and drained
1/2 cup Butter
2 1/2 cups Boiling water

Preparation

In large bowl combine all ingredients except grape leaves, butter, and water.

Place 1 grape leaf on counter; place 1 heaping teaspoon of meat mixture in center. Fold bottom of leaf up over filling; fold in sides and roll tightly. Place rolls in large pot, layer upon layer.

Cut butter into small chunks; place on grape leaf rolls in pot. Gently pour 2 1/2 cups boiling water over grape leaf rolls (enough to cover).

Cook, covered over medium heat 40 minutes.
