Ingredients

2 tbsp Olive oil
1 Large onion chopped
1 Large bell pepper chopped
1 Garlic clove minced
1 6.5oz Can sliced black olives
2 16oz Bags frozen lima beans, cooked and drained (reserve cooking liquid)
1 cup Grated sharp cheddar divided
1 tbsp Red chili powder
1 tbsp Cornstarch dissolved in
1/4 cup Water

Preparation

Preheat oven to 375F. Heat oil in large pan over medium-high heat. Add onions, bell pepper and garlic; saute until soft. Add olives and lima beans. Stir in 1/2 cup cheese.

Add water to reserved bean cooking liquid to measure 1 1/4 cups; add to pan. Place over high heat; bring to boiling. Add chili powder, dissolved cornstarch, and salt to taste; stir until clear and thickened.

Pour over beans and mix well. Place in greased ovenproof casserole dish and cover with foil. Bake 45 minutes. Uncover, sprinkle with cheese and bake until cheese melts.
