This calls for flour tortillas but to lower the sodium use corn tortillas or taco shells.

Ingredients

1 Medium potato
1/2 pound Sausage
1 Small onion, chopped
1 tsp Chili powder
1/4 tsp Cayenne pepper
2 Eggs
6 Flour tortillas
1 cup Swiss cheese, shredded
1/4 cup Tomato, chopped
2 tbl Sour cream
1/4 c Dick's Salsa (recipe in book)

Preparation

Cook potato in boiling water for 35 minutes until tender. When cool, peel and cut into cubes. Brown sausage in frying pan and add onion, chili powder, and cayenne pepper. Cook for 10 minutes. Drain and discard fat. Add cubed, cooked potato. Beat eggs and add to pan. Stir ujtil eggs are set. Spoon mixture onto tortilla, top with shredded cheese, sour cream, and salsa.
