Ingredients
4 cups Water
4-5 Bouillon cubes (chicken flavored or vegetarian)
1 tsp. Rice vinegar
2 Eggs, beaten
1 tsp. Sesame oil
1 Green onion, sliced white and green
You can add a small amount of other vegetables -- mung bean sprouts, carrot matchsticks, a shitake mushroom thinly sliced, etc.
Preparation
1. Boil the water (rapid boil) and add the boullon cubes. Adjust by adding another cube if necessary. Add the rice wine vinegar.
2. Meanwhile beat the eggs together. When the broth is boiling rapidly, pour in the eggs around the edges. Move gently with a fork.
3. Remove from heat and add sesame oil, green onion, and up to 1/3 cup of other vegetables.

I worked in a Chinese carryout in high school. This was one of two things the owners thought was easy and safe for the teenage clerks to help with.
