Simple, basic, Mexican-style caramel custard

Ingredients

1/2 cup Sugar

2 tbsp Water

5 Eggs

1/4 tsp Salt

2 cups Half & half, scalded

2 tsp Vanilla

optional: 1/4 cup Brandy (if use brandy, then not kid-friendly - obviously!)

Preparation

1. Combine 1/4 cup of the sugar and 2 Tbsp water in heavy skillet. Heat slightly until sugar crystallizes and turns to syrup.

2. Quickly spoon into pyrex or ceramic cups or small casserole dishes. Turn these from side to side until the interior of the cups or dishes are coated with the syrup.

3. Heat remaining sugar, together with beaten eggs, vanilla, and salt. Stir in hot half & half (and brandy, if desired). Pour into the cups. Place cups in pan of hot water and bake at 350 for 20-30 minutes or until firm. Then chill. Invert onto serving dishes and serve chilled.
