Salmon Cakes with Strawberries

Ingredients

2 cups Fresh salmon, flaked
1 tbsp Mayo or yogurt
1 1/2 tbsp Grated Parmesan cheese
1 1/2 tbsp Onion, finely chopped
1 Fresh dill sprig, chopped or tarragon
1 Egg
Salt & peper to taste
Lemon zest/ wedges
1/2 c Strawberries, sliced

Preparation

Remove all bones from salmon. Combine salmon, mayo, parmesan, dill or tarragon, onion, and egg & mix well. Form into 6 patties and chill for at least 2 hours.

Heat oliv oil in lge skillet over med heat. Cook patties in single layer, abt 6-8 min, turning once, until golden brown. Season with salt & pepper and serve with lemon wedges & or zest or sour cream.

Serve with 1/2 c strawberries or any berries

Cook's Notes

Salmon cakes need to chill 2 hours so figure this into prep time.
