Italian Pasta Salad with Grilled Chicken

Wholesome meal that's easy to make and low fat.

Ingredients

8 oz. Uncooked rotelle or spiral pasta

1 lb. Boneless chicken breasts, grilled or broiled and cut into strips

2-1/2 cups Assorted cut-up fresh vegetables (broccoli, carrots, tomatoes, bell peppers, cauliflower, onions, and mushrooms)

1/2 cup Cubed cheddar or mozzarella cheese

1/3 cup Sliced pitted ripe olives (optional)

1 cup Wish-Bone House Italian Dressing

Preparation

1. Cook pasta according to package directions; drain and rinse with cold water until completely cool.

2. In large bowl, combine all ingredients except Italian dressing. Add dressing; toss well. Serve chilled or at room temperature.

Cook's Notes

To save time, I often use fully cooked strips of chicken. Also, if preparing a day ahead, refrigerate, then stir in 1/4 cup additional dressing before serving. Nutrient analysis was done using low-fat cheese and fat free dressing.
