Ingredients
2 cups Sliced 1/4" carrots (about 4 medium)
1 cup Chopped onions (about 2 medium)
1 cup Sliced 1/2" celery (2 stalks)
1 lb. Pork sausage links, cut into 2" pieces
4 cups Shredded cabbage
1/2 cup Chopped fresh parsley
1 cup Apple juice
1 15-oz Can tomato sauce
1 14-1/2 oz Can whole tomatoes
1 10-3/4 oz Can tomato soup
1 Bay leaf
1/2 teaspoon Salt
1/2 teaspoon Thyme leaves
1/4 teaspoon Pepper
Preparation
In 2-qt. saucepan combine carrots, onions, celery, and sausage. Cook over medium heat stirring occasionally until sausage is browned and vegetables are crisply tender (approx. 8-12 minutes). Pour off fat. Meanwhile in 3-qt saucepan combine remaining ingredients. Cook over low heat, stirring occasionally until heated through (approx. 12-15 minutes). Stir in cooked sausage and vegetables. Continue cooking, stirring occasionally until stew is thickened (approx. 20-30 minutes).
Cook's Notes
Recipe makes a lot - I freeze half for another day. Also good to make when you have company. It has lots of ingredients but is well worth the effort.
