2 Eggs, any style Zucchini Cakes (can use bean sprouts in place of Zuc or add it ) 1/3 c blueberries

Ingredients

1 cup Grated Zucchini
1 tbsp Oil
2 Eggs, slightly beaten
1/2 clove Garlic, minced
1 tbsp Onlon, grated

Preparation

Mix all ingreds in large bowl & divide int four equal portions.

Heat oil over med-high heat in large skillet.

Drop mixture by serving portions into hot oil.

Press lightly with spatula to form cake shape and cook on each side until browned and heated through.

These are delicious if you season them properly. I used chopped green onion and added diced red peppers and used salt and pepper (you could add all sorts of different herbs) and the result was fantastic. The other comment appears to have thought these were a sweet cake but no - they are clearly intended as a healthier alternative to savory potato pancakes. At any rate, I will make these often for a quick and healthy breakfast.

Very easy to make but not tasty at all. Very bland but I cannot imagine anything to make it better. My younger kids wouldn't even attempt it just by the smell. My oldest son covered it in honey and still could stomach it, I used pancke syrup and tried to enjoy it but not possible.
