Ingredients
2 cups Carrots - sliced 1/4" (approx 4 med)
1 cup Chopped onions
1 cup Celery - sliced 1/2" (approx 2 stalks)
1 lb Pork sausage links, cut into 2" pieces
4 cups Shredded cabbage
1/2 cup Fresh parsley - chopped
1 cup Apple juice
1 can Tomato sauce (15 oz)
1 can Whole tomatoes (14 1/2 oz)
1 can Tomato soup (10 3/4 oz)
1 Bay leaf
1/2 tsp Salt
1/2 tsp Thyme leaves
1/4 tsp Pepper
Preparation
In 2 qt saucepan combine carrots, onions, celery and sausage. Cook over med. heat, stirring occasionally, until sausage is browned and vegetables are crisply tender (8-12 min). Pour off fat. Meanwhile, in 3 qt sausepan combine remaining ingredients. Cook over low heat, stirring occasionally, until heated through (12-15 min). Stir in cooked sausage and vegetables. Continue cooking, stirring occasionally, until stew is thickened (20-30 min).

You can always lower the fat content by using low-fat sausage links.
