Broiled Chicken with Chive Sauce

Ingredients

4 Skinless, boneless chicken breasts
1 Lemon, sliced
Sauce:
3 tbsp Dijon mustard
1 tbsp Sugar
2 tbsp White vinegar
2 tbsp Sour cream
1 tbsp Minced fresh chives (or 1 tsp. dried chives)
1 tsp Dried dill

Preparation

Preheat broiler.

Arrange chicken on broiler pan.

For sauce:

Combine Dijon mustard, sugar, vinegar, sour cream, chives and dill in a small bowl, mix well and set aside half.

Spoon one-fourth of the sauce over the chicken.

Broil for 10 minutes.

Turn the chicken.

Spoon remaining sauce over chicken.

Top with lemon slices.

Broil until juices run clear when meat is pierced, about 15 minutes.

Remove lemon slices.

Serve chicken with reserved sauce.

Cook's Notes

This recipe works well with flounder or orange roughy fillets as substitutes for the chicken as well. Double the recipe and use the leftovers tossed with pasta for dinner the next night.
