This one dish casserole is great to feed a large gathering!

Ingredients
1 package (30 oz) frozen shredded hash brown potatoes, thawed
2 cups (16 oz) sour cream
2 cups (8 oz) shredded sharp cheddar cheese
1 can (10-3/4 oz) condensed cream of chicken soup, undiluted
1/2 cup Chopped onion
1/4 cup Butter or margarine, melted
2 tbsp Chopped fresh parsley
1/2 tsp Pepper
1/4 tsp Salt
Preparation
In large bowl, combine all ingredients. Transfer to ungreased 2-qt baking dish. Bake, uncovered, at 350 for 1 hour or until heated through.
Cook's Notes
As with most recipes, I usually leave the salt out. There's enough sodium in the other ingredients to get a salt taste.
Also, I just mix right in the baking dish so I have one less dish to wash!
