Pina Colada Punch

One of granny's old recipes

Yummy blend of pineapple, cream of coconut, milk, ice cream, and rum! Ideal for those summer weddings, reunions, and barbecues!

Ingredients

9 cups Cold milk

1 quart Vanilla ice cream, softened

4 cans (6 oz each) frozen concentrated pineapple juice

1 cup Plus 2 tablespoons cream of coconut

1 tbsp Rum extract (or 1 cup plus 2 tablespoons light rum)

Preparation

Place all ingredients in a large, chilled punch bowl. Beat with hand mixer or rotary beater until smooth. Makes 15 cups.

Cook's Notes

If the punch will be on a table for a while, frozen milk cubes can be added to keep it cold. The milk can be frozen in an ice cube tray or individual molds, plain or with pieces of fruit.
