Ingredients

1 tablespoon Extra virgin olive oil
1 cup Diced celery
1/2 cup Diced shallot
1 cup Brown jasmine or basmati rice, washed and well drained
2 cups Chicken or vegetable broth (gluten-free if desired)
Sea salt, to taste
Freshly ground black pepper, to taste

Preparation

Heat olive oil in a large saucepan over medium heat. Add celery and shallot and sauté for one minute. Add rice and sauté another 2 minutes. Add broth, salt and pepper, and bring to a boil. Reduce heat to low, cover, and cook for 40 to 45 minutes or until broth is absorbed.
