Ingredients

2 packages Frozen chopped spinach, thawed & drained
3/4 cup Melted butter
2 cups Bread crumbs (Pepperidge Farm herb seasoned stuffing mix preferred)
1 Onion, chopped
2 tsp. Pepper
1/2 tsp. Thyme
1 pinch Garlic powder
6 Eggs, beaten

Preparation

Mix all ingredients in a large bowl and chill.

Roll into balls and bake on cooking sheet for 20 minutes at 350 degrees F.

The amount of pepper (2 tsp.!) for this recipe MUST be a typo. Why would anyone put that much pepper in a dish that yields such a comparatively small amount!?!?

I cut the recipe in half, except cut the spinach in 1/4 - rinsed well, and used 1 1/2 c stuffing. Next time, I'll reduce the pepper, too. These were much better this way.
