Fresh Strawberry Pie

Quick, light and refreshing dessert.

Ingredients

1 Baked pie crust (9 inch)

1 Qt. fresh strawberries

1 1/2 cups Water

3/4 cup Sugar

2 tbsp. Cornstarch

1 (3 oz) pkg. Strawberry jello

Cool whip

Preparation

Mix water, sugar, & cornstarch. Cook over medium heat, stirring constantly, until it comes to boil. Boil 2 minutes longer. Lower heat and put in pkg. of jello. Stir until completely dissolved and set aside to cool. Wash and drain strawberries and cut in halves. Put strawberries in pie shell. Pour mixture over strawberries. Chill, then top with cream.



Variation: Same recipe. Substitute fresh fruit and mixed fruit jello.



Cook's Notes

Pie can be made day before, then topped with cream just before serving.

I used a premade shortbread crust and it was delicious! My dad loves strawberry pie and he thought this was one of the best he ever tasted.
