Better Than You-Know-Who's Chicken Nuggets

This recipe contains about 1/3 the fat of a fast-food serving of fried chicken nuggets.

Ingredients

For Sauce:

1 tablespoon Apple juice concentrate

1 tablespoon Water

1 tablespoon Honey

4 tablespoons Prepared mustard

For Nuggets:

2 Boneless, skinless chicken breasts (about 20 ounces), cut into 1-inch chuncks

1/2 cup Crushed pretzels OR cornflakes

Preparation

Preheat oven to 350 degrees

1. Prepare sauce: Combine apple juice concentarate, water, honey and mustard in small bowl; set aside.

2. Assemble nuggets: Place half sauce in shallow bowl. Place crushed pretzels or cornflakes in shallow bowl.

3. Dip chicken pieces in sauce, then roll in pretzels or cornflake crumbs.

4. Place on ungreased cookie sheet. Bake 15 minutes or until thoroughly cooked.

Serve with remaining dipping sauce.

Cook's Notes

Once you've tried this, you can vary the coating for the nuggest. Try crushed croutons, seasoned breadcrumbs, or potato flakes. For a change from chicken, try turkey breast, firm fish or extra-firm tofu.
* Don't give the dipping sauce to kids under 1 because of the honey.
