| 1/3 cup | Rice vinegar |
| 3 tbsp | Fat free chicken broth |
| 3 tbsp | Pineapple juice |
| 1 tbsp | Sugar or sweetener |
| 1 tbsp | Hot sesame oil |

| 2 tbsp | Sesame seeds, toasted |
| 5 cups | Finely shredded cabbage |
| 1 package | Reduced fat ramen soup noodles, crumbled (discard seasoning packet) |
| 1/2 cup | Chopped cilantro |
| 1/4 cup | Chopped scallions |
Prepare the dressing by stirring together in a small bowl, the vinegar, broth, juice, sugar and oil. Set aside.
Pour the sesame seeds into a small, dry skillet, toast until golden. In a large bowl, combine the sesame seeds, cabbage, uncooked noodles, cilantro and green onions. Add the dressing and toss until the cabbage mixture is coated. Cover and chill in the refrigerator at least 30 minutes, until flavors blend.
Fast and delicious. This can be made even faster by purchasing coleslaw mix in the produce section.
