Ingredients

DRESSING
1/3 cup Rice vinegar
3 tbsp Fat free chicken broth
3 tbsp Pineapple juice
1 tbsp Sugar or sweetener
1 tbsp Hot sesame oil
SALAD
2 tbsp Sesame seeds, toasted
5 cups Finely shredded cabbage
1 package Reduced fat ramen soup noodles, crumbled (discard seasoning packet)
1/2 cup Chopped cilantro
1/4 cup Chopped scallions

Preparation

Prepare the dressing by stirring together in a small bowl, the vinegar, broth, juice, sugar and oil. Set aside.


Pour the sesame seeds into a small, dry skillet, toast until golden. In a large bowl, combine the sesame seeds, cabbage, uncooked noodles, cilantro and green onions. Add the dressing and toss until the cabbage mixture is coated. Cover and chill in the refrigerator at least 30 minutes, until flavors blend.

Cook's Notes

Fast and delicious. This can be made even faster by purchasing coleslaw mix in the produce section.

Delicious, great on a warm day. I also use the bagged cabbage and it was indeed very easy and really enjoyable. Highly recommended.

Whenever I bring this salad to a party it always gets rave reviews. Using bagged cabbage salad makes this recipe a snap. I have also topped the salad with grilled chicken and mandarin oranges to make it a main dish.
