Simmered Black Beans

This is very easy to make and has a wonderful sweet flavor. Try these beans with feta cheese crumbled on top - DELICIOUS

Ingredients

1 lb Black beans

1 Onion, quartered

5 cloves Garlic

Salt to taste

Preparation

Rinse beans and check for stones. Place beans in large cooking pot and add water to cover. Add onion and garlic. Boil beans uncovered until very soft, about 2 hours. Add more water as needed to keep beans covered with liquid at all times. STIR OFTEN. Season beans with salt to taste once cooked.

Cook's Notes

This recipe serves 12. It's great for a party with a Mexican theme. I served them with bbq chicken fajitas and people could tell they were homemade.
