Fruit Soup

Delicious cold soup for a crowd!

Ingredients

4 cups Water

1/2 cup Tapioca

1/2 cup Sugar

1 12 oz Can frozen orange juice concentrate

1 16 oz Can apricot halves and juice

1 16 oz Can sliced peaches and juice

1 cup Grapefruit sections and juice

1 cup Orange sections and juice

2 Bananas, sliced

1 20 oz Package frozen strawberries, thawed

Preparation

Heat water to boiling. Combine tapioca and sugar with enough cold water to make a smooth paste. Add tapioca mixture to boiling water. Cook until clear and thick. Remove from heat. Add orange juice concentrate. Stir until melted. Allow mixture to cool. Add fruit and juice and stir. Serve chilled.

Cook's Notes

Kids love to add fruit and juice to make this soup. Great for a party- it serves 20!
