| 12 oz | Water noodles or linguine |
| 3 tbsp | Sesame oil |
| 21/2 tbsp | Fresh ginger |
| 1 | Small jalapeno chili, seeded |
| 1 cup | Cilantro, packed |
| 1 tbsp | Soy sauce |
| 1 tbsp | Rice vinegar |
| 1 tbsp | Smooth peanut butter |
| 3 tbsp | Chicken broth or veggie broth |
Cook noodles, drain, rinse with cold water and drain well. Toss with 1 tbsp sesame oil. With processor running, drop in ginger & chili to mince. Add cilantro, soy, vinegar, peanut butter, 3 tbsp broth and 2 tsp sesame oil. Process until smooth, adding more broth if necessary. Season to taste with salt and pepper. Add sauce to noodles and toss.
Also good as a side dish.
