Asian Noodles with Ginger-Cilantro Sauce

Quick pasta with a twist

Ingredients

12 oz Water noodles or linguine
3 tbsp Sesame oil
21/2 tbsp Fresh ginger
1 Small jalapeno chili, seeded
1 cup Cilantro, packed
1 tbsp Soy sauce
1 tbsp Rice vinegar
1 tbsp Smooth peanut butter
3 tbsp Chicken broth or veggie broth

Preparation

Cook noodles, drain, rinse with cold water and drain well. Toss with 1 tbsp sesame oil. With processor running, drop in ginger & chili to mince. Add cilantro, soy, vinegar, peanut butter, 3 tbsp broth and 2 tsp sesame oil. Process until smooth, adding more broth if necessary. Season to taste with salt and pepper. Add sauce to noodles and toss.

Cook's Notes

Also good as a side dish.
