Ingredients

1/4 Red onion, whole
3 ounce Chicken breast, boneless/skinless, pre-cooked
1/2 cup Mandarin oranges, canned in juice, drained
2 tbsp Peanuts, dry roasted
1 box Raisins (14 g individual size)
1 tbsp Salad dressing, fat-free any flavor
1/4 pound Lettuce, romaine

Preparation

Chop onion; place in small bowl.

Measure specified amount of chicken, chop and place in bowl with onions.

Drain Mandarin oranges and pat dry.

Place in bowl with chicken and onions.

Add peanuts and raisins to other ingredients.

Measure 1 Tbsp salad dressing, pour over chicken comination and toss.

Serve chicken mixture over a bed of romaine lettuce.

Cook's Notes

If you are bringing this dish out, carry lettuce in a separte container and combine just before serving.

The individual who enterred this recipe included 8 ounces of milk in the ingredients for the salad. The milk has been removed since it wasn't actually part of the recipe but was meant to be a drink to accompany it.

This site is sponsored by the California Dairy Counsel, so every recipe will have some sort of dairy ingredient. The salad is dairy-free, but since the goal is to have dairy in every recipe, milk is added as a side drink.

I'm just adding a comment, not a rating. A previous review asked what to do with the milk. I believe the milk is meant to be served as a drink with the salad and not part of the recipe. I agree it's confusing and the recipe should be rewritten to clarify that. Once I've tried the recipe, I'll write a real review!

I am confused about what to do with the milk. Is it to be mixed in with the salad greens after everything else? Have not tried it yet, because of the confusion. Sounds delicious.
