| 1 pkg | Rice-a-Roni Fried Rice Mix |
| 1/2 cup | Chopped bell pepper |
| 1/2 cup | Chopped celery |
| 3 | Chopped green onions |
| 1 | Small jar pimentos (diced) |
| 1 | Small jar artichoke hearts (reserve 1/4 cup artichoke juice) |
| | Sliced black olives |
| 3/4 cup | Toasted slivered almonds (optional) |
| 1/4 cup | Mayo |
Prepare the rice as directed on box. Cool; add all veg. Combine 1/4 cup artichoke juice and mayo plus black olives and toasted slivered almonds. Blend into rice and vegetable mixture.
Chill at least 1 hour - better if made the day before.
I slice the artichoke hearts for more uniform size and texture.
