Artichoke Rice Salad

Ingredients

1 pkg Rice-a-Roni Fried Rice Mix
1/2 cup Chopped bell pepper
1/2 cup Chopped celery
3 Chopped green onions
1 Small jar pimentos (diced)
1 Small jar artichoke hearts (reserve 1/4 cup artichoke juice)
 Sliced black olives
3/4 cup Toasted slivered almonds (optional)
1/4 cup Mayo

Preparation

Prepare the rice as directed on box. Cool; add all veg. Combine 1/4 cup artichoke juice and mayo plus black olives and toasted slivered almonds. Blend into rice and vegetable mixture.


Chill at least 1 hour - better if made the day before.

Cook's Notes

I slice the artichoke hearts for more uniform size and texture.
