The night before, place meat lean side up in a glass baking dish. Cover with Worcestershire sauce, seasoned salt, black pepper and cayenne pepper. Turn over to fat side up and repeat coating process. Cover tightly with aluminum foil. Refrigerate overnight. One to two hours before cooking, take out of refrigerator and allow to come to room temperature. Cook in 300 degree oven uncovered for 3-4 hours. Baste with pan juices every 20-30 minutes. Slice against grain.
